basically you need to manually do what fstab would do, e.g. you mount your root drive at /mnt/ or something like that, then you chroot into /mnt/ and mount your efi partition. Apparently to /boot which is where it is for me (just check /etc/fstab)
then you update the problematic packages again and make sure when it compiles the initramfs that it doesn’t have any nvidia driver related errors.
